Diakon Radish and Chinese Kale Soupdiakonsoup1

This is a deliciously spicy and fresh tasting soup to warm up with on a cold winter night. It’s one of our favorite soups here at U GROW! As per usual, we suggest you use fresh, natural & organic ingredients for the healthiest and tastiest result.

2 medium diakon radishes sliced in ¼” rounds
1 white onion quartered and sliced
3-5 mustard greens or Chinese kale leaves sliced
2 oz fresh ginger peeled and thinly sliced
4 cloves garlic, minced
2 carrots halved and sliced diagonally
2 jalapenos thinly sliced
1 tsp toasted sesame oil
1 tsp sambal chili paste
1 gallon vegetable, or chicken broth
¼ tsp Chinese 5 spice
3 Tbs rice vinegar
4 Tbs soy or tamari sauce
1 tsp white pepper
2 Tbs agave syrup

1. Sweat onions in pot for 5 minutes with sesame oil. Add ginger, diakon, 5 spice, pepper and garlic. Add liquid (vegetable or chicken base). Simmer low for 30 min
2. Add vinegar, soy, chili paste and agave and taste. Add greens and simmer for 10. Add carrots and jalapenos – simmer low for 15. Finish with a few drops of sesame oil and serve 5-8

* This soup can be made extra amazing when served with wontons!
